No-Bake Coconut Oat Bars

We’re kicking off our 30-Day Healthy Snacks Challenge a little early with this delicious + easy recipe for no-bake coconut oat bars with a decadent chocolate drizzle on top. You will fall in love with these! We did. They’re already gone!

These took no time to make, and had less than 10 ingredients. Easy peasy!

INGREDIENTS

  • 1 cup old-fashioned oats (gluten free)

  • 1 cup shredded coconut (unsweetened)

  • 1/4 almond flour

  • 3/4 cup peanut butter (organic, sugar free)

  • 1/3 cup honey

  • 1/2 tsp sea salt

  • 1 tsp vanilla

  • 1/3 cup dark chocolate

STEPS

In a large bowl, mix together the dry ingredients (oats, coconut, almond flour). Set aside.

Using a double boiler or the microwave, melt together the peanut butter and honey until creamy. Add vanilla and sea salt.

Mix wet with dry. You may need to use your hands to mix together.

Pour mixture into 8x8 inch pan. Use your hands to pat down firmly.

Melt chocolate with double boiler or microwave. Drizzle chocolate on the top on the bars.

Put in fridge, and set aside until firm (usually one hour).

Slice and enjoy!
