Pumpkin Puree

All great things start with a pumpkin puree, especially when it’s homemade. I know, I know — buying pumpkin puree is so easy. Well, let me tell you — so is making your own! Plus, you can get your kids involved, which makes it so much fun. 

INGREDIENTS

  • 1 baking pie pumpkin (one baking pie pumpkin will yield about 2 cups of puree which is enough for 1 pumpkin pie)

  • Sea Salt

  • Avocado Oil or Coconut Oil (about 1-2 tsp)

  • Baking sheet + parchment paper

RECIPE

Preheat over to 350. Line bakin sheet with parchment paper.

Prepare pumpkin. Cut off stem, then cut pumpkin in half.

Use a spoon to scoop out seeds. Save seeds later to make roasted pumpkin seeds.

Brush oil on the flesh of the pumpkin. Use avocado for savoury and coconut oil for sweet.

Flip pumpkin over and pierce skin with knife to make breathing holes (about 15 pokes on each pumpkin will do).

Place pumpkins on baking sheet and bake at 350 for 45-55 minutes.

Remove from oven. Let cool, then scoop insides into blender. It should just fall out.

Add a little water if needed.

And there you have your homemade pumpkin puree for all your healthy baking.
