Pumpkin Pie Pudding

Let’s get into the season of things! We’re getting pumpkin-y with this delicious homemade pumpkin pie pudding. It literally tastes like the real thing! 

INGREDIENTS

  • 2 cups pumpkin puree

  • 1 can coconut cream (chilled in fridge overnight)

  • 2-3 TBSP maple syrup

  • 1.5 tsp of pumpkin pie spice

RECIPE

To start, flip your chilled can of cononut cream upside down and open the top. Pour out all the liquid. The remaining coconut cream will be hard. This is what you want. Scoop this out and place into mixing bowl.

Blend coconut cream with a hand mixer until creamy. Add the puree, maple syrup and pumpkin pie spice. Blend until creamy.

Scoop mixture into two containers, and chill in the fridge for a few hours or overnight.

Serve with coconut whipped cream and roasted nuts. Yum!

This recipes is the perfect treat for our healthy snack challenge, and only has three ingredients plus spices. Totally delicious + guilt-free!
