Strawberry Shortcake

We just came back from the farm with a carton of fresh, local strawberries and they are heaven!

Really, all you have to do is wash them, and dig in. But we decided to do something extra fun!

We made homemade strawberry shortcake ice cream sandwiches using all natural, local ingredients.

They’re ooey, gooey, messy and totally worth it! A great way to kick off summer.

RECIPE

Strawberries

Slice up fresh strawberries, and marinate in a dash of maple syrup, coconut sugar or honey.

Shortbread Cookies

Bake soft and chewy shortbread cookies. Preheat over to 325. In large bowl, combine 3 cups almond flour, 1.5 tsps of baking soda and pinch of sea salt. In second bowl, whisk 2 eggs, 2 tbsp honey and 1 tbsp lemon juice. Combine both bowls. Scoop out six cookies. Flatten, and mold each like hamburgers. Bake for 15-17 minutes.

Whipped Cream or Ice Cream

Make homemade coconut whipped cream, or use ice cream from the store.
Then, slice the cookies in half (or use two) and fill with ice cream or coconut whipped cream. Add your strawberries, and voila! Pure heaven.
