Happy Cinco de Mayo! We are so excited to celebrate a little Mexican culture in our house with our Cactus Juice and Churros Bar.

We’ve been talking about this all week. So as soon as Chet and Coco and big dada get home, we’ll be enjoying!

Churros Bites

I wanted to buy authentic Mexican Churros but could not find them anywhere. I then thought, maybe I could make them and did find some easy recipes for baked Churros, but I ran out of time. I needed to find a solution and fast. Did you know that Churros are deep fried doughnuts essentially, then dusted with butter and cinnamon sugar? There was my easy solution, a 25 pack of plan doughnut holes we could then decorate with delicious toppings.

Toppings

I added whip cream, chocolate sauce, chocolate sprinkles, mini M&Ms, chopped nuts, and sprinkles. You could really do anything, the possibilities are endless.

Cactus Juice

The recipe for this called for 2 CUPS of SUGAR (ugh) and lots of fake ingredients (Kool Aid). Naturally, I decided to make my own version and it was EASY and delicious. Add two parts Fresca to one part pineapple juice and a sprinkle of natural, green food colour to brighten it up.

Decorations

You won’t believe this but this only cost me $15 (food aside). My best tip for decorating is keep your old decorations, build up your serving dishes and shop the clearance section at Party City or hit the dollar store. Have a vision, and then buy cost effectively. Pinterest is great for ideas.
